			<content:encoded><![CDATA[<p>This is a great hummus recipe. It&#8217;s a great healthy alternative to mayo on sandwiches and great at parties.</p>
<p>1 can chickpeas (rinsed, save water)<br />
4 cloves garlic<br />
1/4 cup tahini<br />
lemon juice<br />
salt<br />
red pepper flakes (optional)<br />
paprika (to serve)<br />

1. In good blender or food processor, process garlic until chopped.</p>
<p>2. Add chickpeas and some of the water (about 1/4 of it). Process until you can see no more whole chickpeas.</p>
<p>3. Add tahini, mix well.</p>
<p>4. Add some lemon juice and salt to taste. If too thick, add more chickpea water.</p>
<p>Variation: mix in some red pepper flakes for a spicy version. </p>
<p>To serve: top it off with a sprinkling of paprika.</p>
